The rainbow trout (Oncorhynchus mykiss) is a temperate climate fish species which adapted itself to rivers in mountainous regions worldwide and has most of the requirements fish consumers demand. It is one of the most cultivated species of the Salmonidae family since it features excellent qualities for aquaculture and sport fishing.
Whole rainbow trout contain 70.2% moisture, 16.9% protein, 10.1% lipids and 2.4% ash, whereas rates for fillets respectively amounted to 73.8, 19.5, 1.5 and 4.9%.
