Silver carp, Hypophthalmichthys molitrix, is one of the most intensively cultured fish species. These fish comprise much of the production of Chinese aquaculture and are raised in polyculture systems across Asia and Europe. Silver carp are also stocked in lakes and reservoirs to increase fish production, and these algivorous fish have been suggested as biological control agents for phytoplankton. This fish has white meat with mild odor and flavor, so used it for surimi production.
